Banana Crunch Pancakes

Banana Crunch Pancakes are an easy breakfast option. Loaded with bananas and crunchy granola they make up quickly and are filling and satisfying!
Ingredients
  • 1 cup pancake mix, gluten free if you like
  • 1 large organic egg
  • ¾ cup organic, whole milk
  • 1 tablespoon coconut or grape seed oil
  • 2 bananas, sliced
  • ½ cup granola
Instructions
  1. Mix first four ingredients until just blended. Be careful to not over mix the batter, a few lumps are good.
  2. Ladle about ⅓ to ½ cup of mixture onto griddle, you'll have between 4 and 6 pancakes.
  3. Place several banana slices and a tablespoon or so of granola on each pancake. Press in lightly with the back of a spoon.
  4. Cook for a few minutes until little bubbles appear on the surface. Flip pancakes over.
  5. Cook for a few more minutes. Serve with butter, syrup or fruit jam.
