Kate's Christmas Dinner

- 1 Spiral sliced ham, 7-8 pounds
- 1 cup organic brown or coconut sugar
- 1 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- 3 tablespoons water
- 3 tablespoons orange marmalade or peach jam
- 1 teaspoon Madras curry powder
- 1 tablespoon dijon mustard
- Put your ham in a big, lightly greased roasting pan. Don't forget to remove the plastic button.
- Cover tightly with foil and bake for 12- 15 minutes a pound at 275 or till internal temp reaches 140.
- Mix sugar and spices in a small saucepan.
- Add the water, marmalade or jam, curry powder, and dijon mustard. Bring to a boil and boil for 1 minute.
- Remove ham from oven. Carefully remove foil covering.
- Using a basting brush, paint the glaze all over the cooked ham getting in between the layers a bit. Save leftover glaze.
- Place ham uncovered back in the oven for 10 minutes.
- Remove from oven and serve. Pass leftover glaze at the table.
