Almond Butter Granola

Serves: About 8 cups
- 4 cups old fashioned oats
- 1 cup raw almonds
- 1 cup whole pecans
- ½ cup shredded coconut
- ¾ teaspoon cinnamon
- ¼ teaspoon nutmeg (optional)
- ½ teaspoon salt
- 1 cup creamy almond butter
- ½ cup pure maple syrup
- ¼ cup coconut oil, melted
- ½ cup coconut or brown sugar
- ½ cup raisins
- ½ cup sweetened cranberries or dried cherries
- 1 teaspoon vanilla
- Preheat oven to 325.
- Combine dry ingredients in a large bowl.
- Combine almond butter, maple syrup, vanilla, and coconut oil in a small saucepan and gently heat. Stir until smooth and combined.
- Pour over oat mixture. Then pour onto a large baking sheet covered in a Silpat mat or parchment paper. Spread evenly.
- Bake 40 minutes, stirring once at 20 minutes.
- Let cool without stirring for 45 minutes.
- Break into pieces. Store in a covered container.
