Kate's Christmas Dinner

  • 1 Spiral sliced ham, 7-8 pounds
  • 1 cup organic brown or coconut sugar
  • 1 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 3 tablespoons water
  • 3 tablespoons orange marmalade or peach jam
  • 1 teaspoon Madras curry powder
  • 1 tablespoon dijon mustard
  1. Put your ham in a big, lightly greased roasting pan. Don't forget to remove the plastic button.
  2. Cover tightly with foil and bake for 12- 15 minutes a pound at 275 or till internal temp reaches 140.
  3. Mix sugar and spices in a small saucepan.
  4. Add the water, marmalade or jam, curry powder, and dijon mustard. Bring to a boil and boil for 1 minute.
  5. Remove ham from oven. Carefully remove foil covering.
  6. Using a basting brush, paint the glaze all over the cooked ham getting in between the layers a bit. Save leftover glaze.
  7. Place ham uncovered back in the oven for 10 minutes.
  8. Remove from oven and serve. Pass leftover glaze at the table.
