This is my answer to a real girl who has real questions and concerns. You might have them too. “You ask some tough questions. You’re asking me if you should trust God in a big way, big enough to ‘come through for you.’ Or, should you just give up on your hopes and dreams, give up …
Where are You Sitting?
I don’t like to fly. I love to travel but flying is not my favorite for many reasons, mostly my lack of being able to control the airplane. However, there’s one thing I do love about flying. I love to look at the clouds, those big fluffy, white, cumulous, cotton-ball clouds, pure and clean, soft and so inviting. If you fly on a clear day you can see the roads and the fields and the cars like tiny black bugs crawling all over the ground. I always get a window seat when I fly. Always. Because I love to look out the window, far above the clouds where all the people and all my problems shrink to tiny specks. I get a new perspective every time I’m in the air. All the problems of this world and my life shrink to pinpricks.
Poached Salmon with Dill Sauce and Roast Asparagus
Spring is beautifully expressed in a lovely dish of poached salmon, cool dill sauce and sweet roast asparagus. Don’t be fooled by poaching, it’s simply simmering something in liquid until cooked through. It couldn’t be easier and I know once you try it you’ll love it! And happily, it doesn’t add any fat to the dish so it’s a calorie-concious way to cook. You can poach eggs, fish and chicken breasts with ease. I often poach chicken breasts in hot chicken broth then cool and shred for chicken salad. Poaching is an easy and elegant skill to master. Give it a try and let me know how you like it! Poached salmon with dill sauce might be the perfect romantic dinner for two!
Gluten-Free Strawberry Shortcake Cupcakes
These Gluten-Free Strawberry Shortcake Cupcakes are just the perfect marriage of fresh strawberries, homemade whipped cream and delicious, lightly coconut flavored gluten free cake. You don’t even notice that they’re gluten free but they are and they. are. addicting! I use organic coconut flour, raw honey, coconut oil and organic flaked coconut. These are so simple and, when you cut one in half, the strawberry in the center makes it look just like a little adorable strawberry shortcake! You can also make this into a lovely layer cake with sliced strawberries between the layers and decorating the whipped cream on the top. It’s a wonderful cake for a baby or wedding shower
Job and The Deeper Deeps or How to See God
Job is the one character, the one book, most of us wish was not in the bible. We don’t ever want to consider his lot falling to us. Don’t even go there. It’s a hard story with hard truth and some of it is hard to grasp. But, The God Dare is in the Job story too. Job was one of the biblical ‘good guys’ in fact he was,
“..blameless and upright, and one who feared God and shunned evil.” Job 1:1.
A description befitting most of you reading this. You’re good right?
