I’ve fallen hard for these ginger cookies. A cup of tea or an ice cold glass of milk, a handful of perfectly crisp and spicy cookies and I can wile away the afternoon dreaming of the holidays and reading A Christmas Carol one more time. It’s what these cookies will do to you. Maybe it’s the first crunch and snap of sweet ginger goodness, followed by a definite tingle on your tongue as the pepper and cayenne hit. I’ve been pondering ways to simplify the feast this year. Maybe focus more on family than food. Look back to a time when things were simpler and maybe consider making things a bit healthier this year. Is it really necessary to go into a food induced coma and pass out on the couch after your Thanksgiving meal? I don’t know, call me old fashioned but I kind of like the idea of being a bit less over the top this year. Less really is more. 🙂

And amazingly, married to an Italian as I am, there is no red sauce, no ricotta, no mozzarella but boy, oh boy is there incredible flavor. Savory bites of mushroom, creamy nutmeg scented béchamel (which is just a fancy name for white sauce), a hint of garlic and lots of freshly grated parmesan cheese. It’s not low calorie but it might just make you swoon. It freezes brilliantly if you have some left over. Which I sincerely doubt. It’s the perfect vegetarian option for your Thanksgiving feast. Rich and creamy and supremely decadent. Even the turkey lovers will want a piece!
