What is it about meatloaf? It can be absolutely delicious or completely blah. To me, it’s classic comfort food, super quick to put together and if you use the right ingredients, a healthy and delicious dish for your family. It’s flexible, versatile and you can change up ingredients at will. This recipe makes a large, super moist and tender meatloaf. My husband has never been a big meatloaf fan but he literally devours this when I serve it!

You can use canned (wild caught) salmon! Or use fresh if you chop it up or pulse it a few times in the food processor. It also works fabulously with fresh crab meat.

Mix everything together and form into patties in the morning and at dinner time, all you have to do is cook them for 4-5 minutes on each side, just enough time to throw together a quick green salad and steam a veggie!

Use gluten free pasta if you want to keep this totally gluten free. Or, keep it completely raw by subbing ribbons of zucchini for the pasta!
