Almond Butter Granola

Yummy, crunchy, easy to make granola! The addition of almond butter gives it more clusters of cinnamony goodness to enjoy!

- 4 cups old fashioned oats
- 1 cup raw almonds
- 1 cup whole pecans
- ½ cup shredded coconut
- 3/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg optional
- 1/2 teaspoon salt
- 1 cup creamy almond butter
- ½ cup pure maple syrup
- ¼ cup coconut oil melted
- ½ cup coconut or brown sugar
- ½ cup raisins
- ½ cup sweetened cranberries or dried cherries
- 1 teaspoon vanilla
Preheat oven to 325.
Combine dry ingredients in a large bowl.
Combine almond butter, maple syrup, vanilla, and coconut oil in a small saucepan and gently heat. Stir until smooth and combined.
Pour over oat mixture. Then pour onto a large baking sheet covered in a Silpat mat or parchment paper. Spread evenly.
Bake 40 minutes, stirring once at 20 minutes.
Let cool without stirring for 45 minutes.
Break into pieces. Store in a covered container.
