Just 5 ingredients. Fresh basil, garlic, toasted pine nuts (or almonds or walnuts), olive oil and freshly grated parmesan cheese. Pine nuts can be ridiculously expensive so feel free to use almonds or walnuts for equally delicious Pesto!
It’s summer and your basil is deeply green and vibrant and just begging to be turned into pesto. It’s a classic sauce that adds amazing flavor and zing to so many dishes and best of all, it’s ridiculously easy to make! Five ingredients and 10 minutes and you can indulge in one of summer’s easiest and most versatile treats.
Toss your pesto with hot whole grain pasta, use with sauteed chicken breasts, make pasta salad, drizzle over sliced tomatoes and mozzarella or slather it on toasted ciabatta bread with slices of grilled eggplant, roasted peppers and provolone cheese. It’s unbelievable on hot corn on the cob. Seriously. The possibilities are endless.
The God Dare
Have you ever felt it? The tug in your conscience of a really big thing? I mean really big. Bigger than you and virtually impossible to pull off? The still small voice that thunders through your being, grips your heart and won’t let it go? I heard it clear as a bell a couple of years ago. Mike and I had been invited to speak at a big meeting for a homeschool organization. They wanted us to speak about the steps we’d taken to raise our daughter into an adult who’d found her purpose and was living it out. Mike and I talked it over and came up with 15 intentional things we’d done as parents and later that week we spoke at the meeting.
So, the morning after the meeting, there I am stretched out on the floor…..
When God Allows What He Could Prevent
Last Saturday, Mike and I were driving home from Atlanta and as I read the first sentence of an email, I inhaled so sharply at the shocking words I scared my poor husband to death! It was completely involuntary because the news was that difficult. I sat there stunned and heartbroken at the words not even knowing how to respond. I have no touchstone for this. I thought I knew God’s ways but I don’t understand how this happened. There was so much prayer and faith, and belief.
Chicken Chili
Some nights I crave spicy, southwestern flavors like warm chili and hot jalapenos, cool avocados and smooth sour cream. And when I have a craving, I want to satisfy it fast-in an hour or less.
So, with that in mind, let me offer my favorite chicken chili recipe, ready in about an hour, full of flavor and perfect for a crowd.
How to Bungee Jump
My common sense will totally try and contradict the still, small voice. Every time…every stinkin’ time.
Do you ever get those wild thoughts, those lunatic impressions or giant glimpses of the future and you think, no way, that’s crazy and I don’t live in crazy town!
But if you’re like me you sometimes let that thought marinate and think…what if? Just what if it’s God directing me and not me being hormonal or menopausal or a hundred other excuses we give for not taking a risk and daring to dream? It’s easy to brush those thoughts away because usually they require us to make a change. And I don’t like change. Change in behavior, change in environment, change in attitude. Okay, I admit it, I like the predictable parts of life. And the God I know is anything but predictable!
