And, believe it or not, because you use a good fat called ghee, it’s actually good for you! I know, how can fried chicken ever be good for you right? But it can! It satisfies every desire for crunchy and crispy you’ve got. I don’t know if you’re like me but I’m a crunchy cookie kind of girl, I love my toast a bit overdone, I always order my french fries ‘extra-crispy’ (although I’m not eating those right now!) and my pizza crisp on the bottom (not eating that either right now) 🙂 So when I found this recipe I simply had to try it. Don’t be fooled by poaching, it’s simply simmering something in liquid until cooked through. It couldn’t be easier and I know once you try it you’ll love it! And happily, it doesn’t add any fat to the dish so it’s a calorie-concious way to cook. You can poach eggs, fish and chicken breasts with ease. These Gluten-Free Strawberry Shortcake Cupcakes are just the perfect marriage of fresh strawberries, homemade whipped cream and delicious, lightly coconut flavored gluten free cake. Here’s a heart healthy and delicious recipe loaded with Omega-3’s to add to your collection. I make these all the time! Honestly, this is one of my ‘go-to’ dinner recipes and the best part? You can use canned (wild caught) salmon! Or use fresh if you chop it up or pulse it a few times in the food processor. It also works fabulously with fresh crab meat.
Even my friends who don’t love fish love these salmon patties. They are crisp on the outside, tender on the inside, full of flavor and easy to make. Mix everything together and form into patties in the morning and at dinner time, all you have to do is cook them for 4-5 minutes on each side, just enough time to throw together a quick green salad and steam a veggie!

My favorite and most beautiful way of eating beets is in this luscious, fuschia, dill infused lemony beet borscht. Most people think of borscht as a hot winter soup rich with beef and cabbage and indeed, it is. This is the light, cold and summery version.
