Some recipes change your world. This is one of them because these Gluten Free Blondies are the epitome of pure perfection in a bar–chewy/crisp, not overly sweet, crunchy with nuts and toasted coconut, and speckled with warm, melty chocolate.
These Gluten Free Blondies are truly divine and one of my favorite recipes I’ve ever created. They go perfectly with a tall glass of ice cold (organic) milk or a cup of strong coffee. If you take them to a summer barbecue, picnic or potluck I guarantee they will be the hit of the party! Or, tuck them…

Cracklin’ & Crunchy Chicken
I just discovered this amazing and easy way to cook chicken and it’s so good and makes chicken so crunchy, you won’t miss heavy, greasy fried chicken at all! And, believe it or not, because you use a good fat called ghee, it’s actually good for you! I know, how can fried chicken ever be good for you right? But it can! It satisfies every desire for crunchy and crispy you’ve got. I don’t know if you’re like me but I’m a crunchy cookie kind of girl, I love my toast a bit overdone, I always order my french fries ‘extra-crispy’ (although I’m not eating those right now!) and my pizza crisp on the bottom (not eating that either right now) 🙂 So when I found this recipe I simply had to try it. Crispy, crunchy, cracklin’ chicken with no grain and cooked in a healthy fat? And ready in 10 minutes? Sold!!! I discovered the recipe……
Gluten-Free Strawberry Shortcake Cupcakes
These Gluten-Free Strawberry Shortcake Cupcakes are just the perfect marriage of fresh strawberries, homemade whipped cream and delicious, lightly coconut flavored gluten free cake. You don’t even notice that they’re gluten free but they are and they. are. addicting! I use organic coconut flour, raw honey, coconut oil and organic flaked coconut. These are so simple and, when you cut one in half, the strawberry in the center makes it look just like a little adorable strawberry shortcake! You can also make this into a lovely layer cake with sliced strawberries between the layers and decorating the whipped cream on the top. It’s a wonderful cake for a baby or wedding shower
Tomato Soup & Grilled Cheese Croutons
What’s more comforting than a rich bowl of creamy, warm tomato soup? Maybe with a little sass added to it, a few ingredients to kick it up a bit. A dash of basil, a glug of heavy cream, a pinch of crushed red pepper, a smidge of sundried tomatoes. Blend it all together, put grilled cheese croutons on top and you’ve got dinner worthy, guest worthy soup. And it’s soup-er easy to put together. In fact, I bet you already have most of the ingredients in your pantry right now!
French Toast Muffins
While making overnight french toast recently I had an epiphany. Instead of mixing together cubes of bread, eggs, milk, cinnamon, maple syrup, etc. and baking it in a big pyrex, couldn’t I take an ice cream scoop and scoop up the mixture and then bake it in muffin tins? Wouldn’t it be fun, pretty and easy …
