Gazpacho, Spain’s famous chilled tomato based soup, is basically summer in a bowl or salad in a blender. It sounds fancy to say it but it’s uber-easy to make! There’s the classic red version of Gazpacho, tomato based, and the classic White Gazpacho, usually made with cucumber, almonds and grapes but I’ve changed it and kicked it up a notch and I’m using an ingredient that will surprise you!

I just discovered this amazing and easy way to cook chicken and it’s so good and makes chicken so crunchy, you won’t miss heavy, greasy fried chicken at all! And, believe it or not, because you use a good fat called ghee, it’s actually good for you! I know, how can fried chicken ever be good for you right? But it can! It satisfies every desire for crunchy and crispy you’ve got. I don’t know if you’re like me but I’m a crunchy cookie kind of girl, I love my toast a bit overdone, I always order my french fries ‘extra-crispy’ (although I’m not eating those right now!) and my pizza crisp on the bottom (not eating that either right now) 🙂 So when I found this recipe I simply had to try it. Poached Salmon with Dill Sauce and Roast Asparagus
Spring is beautifully expressed in a lovely dish of poached salmon, cool dill sauce and sweet roast asparagus. Don’t be fooled by poaching, it’s simply simmering something in liquid until cooked through. It couldn’t be easier and I know once you try it you’ll love it! And happily, it doesn’t add any fat to the dish so it’s a calorie-concious way to cook. You can poach eggs, fish and chicken breasts with ease. These Gluten-Free Strawberry Shortcake Cupcakes are just the perfect marriage of fresh strawberries, homemade whipped cream and delicious, lightly coconut flavored gluten free cake. You don’t even notice that they’re gluten free but they are and they. are. addicting! I use organic coconut flour, raw honey, coconut oil and organic flaked coconut. These are so simple and, when you cut one in half, the strawberry in the center makes it look just like a little adorable strawberry shortcake!
