Almond Butter Granola

Almond Butter Granola

This might be the crispiest, crunchiest, yummiest granola I’ve ever made! It’s easy-peasy and if you do 2 simple things:

1- Don’t stir it more than once half-way through and

2- Let it cool completely before breaking into pieces, you will have lots of chunky pieces to enjoy, almost like chunks of oatmeal cookies!

Yummy, crunchy, easy to make granola! The addition of almond butter gives it more clusters of cinnamony goodness to enjoy!

Ingredients
  

  • 4 cups old fashioned oats
  • 1 cup raw almonds
  • 1 cup whole pecans
  • ½ cup shredded coconut
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg optional
  • 1/2 teaspoon salt
  • 1 cup creamy almond butter
  • ½ cup pure maple syrup
  • ¼ cup coconut oil melted
  • ½ cup coconut or brown sugar
  • ½ cup raisins
  • ½ cup sweetened cranberries or dried cherries
  • 1 teaspoon vanilla

Instructions
 

  • Preheat oven to 325.
  • Combine dry ingredients in a large bowl.
  • Combine almond butter, maple syrup, vanilla, and coconut oil in a small saucepan and gently heat. Stir until smooth and combined.
  • Pour over oat mixture. Then pour onto a large baking sheet covered in a Silpat mat or parchment paper. Spread evenly.
  • Bake 40 minutes, stirring once at 20 minutes.
  • Let cool without stirring for 45 minutes.
  • Break into pieces. Store in a covered container.

Kate’s Tips

  • Feel free to switch up the kind of nuts you use. I love almonds and pecans but walnuts, cashews, pistachios, macadamias, sunflower seeds, sesame seeds or pumpkin seeds are all great substitutes.
  • If you don’t like maple syrup, substitute a good raw honey.
  • Use your favorite dried fruit. Figs, dates, golden raisins, dried apricots, dried cherries…all of those will work.
  • If you let the granola cool without touching it, you’ll get more chunks, almost like oatmeal cookies!
  • Serve as is or with fresh yogurt and berries.
  • Almond butter granola makes a wonderful topping for ice cream!
  • Use old fashioned whole oats, not the quick oats.
  • This recipe is gluten free!
  • I typically use shredded coconut but you could just as easily use coconut flakes.
