Almond Butter Granola

Almond Butter Granola

 

This might be the crispiest, crunchiest, yummiest granola I’ve ever made! It’s easy-peasy and if you do 2 simple things:

1- Don’t stir it more than once half-way through and

2- Let it cool completely before breaking into pieces, you will have lots of chunky pieces to enjoy!

Serves: About 8 cups
 
Yummy, crunchy, easy to make granola! The addition of almond butter gives it more clusters of cinnamony goodness to enjoy!
Ingredients
  • 3 cups old fashioned oats
  • 1 cup raw almonds
  • 1 cup whole pecans
  • ⅓ cup shredded coconut
  • ¾ teaspoon cinnamon
  • ¼ teaspoon nutmeg (optional)
  • ½ teaspoon salt
  • ⅓ - ½ cup creamy almond butter
  • ⅓ cup pure maple syrup
  • ¼ cup coconut oil, melted
  • ⅓ cup coconut or brown sugar
  • ½ cup raisins
  • ½ cup sweetened cranberries
  • 1 teaspoon vanilla
Instructions
  1. Preheat oven to 325.
  2. Combine dry ingredients in a large bowl.
  3. Combine almond butter, maple syrup and coconut oil in a small saucepan and gently heat. Stir until smooth and combined.
  4. Pour over oat mixture. Then pour onto a large baking sheet covered in a Silpat mat or parchment paper. Spread evenly.
  5. Bake 30 minutes, stirring once at 15 minutes.
  6. Let cool without stirring for 45 minutes.
  7. Break into pieces. Store in a covered container.

  • Organic Creamy Almond Butter
  • Pure Maple Syrup
  • Organic Raisins
  • Organic Old Fashioned Oats
  • Coconut Sugar
  • Coconut Oil
  • Raw Almonds
  • Shredded organic coconut

Kate’s Tips

  • Feel free to switch up the kind of nuts you use. I love almonds and pecans but walnuts, cashews, pistachios, macadamias, sunflower seeds, sesame seeds or pumpkin seeds are all great substitutes.
  • If you don’t like maple syrup, substitute a good raw honey.
  • Use your favorite dried fruit. Figs, dates, golden raisins, dried apricots…all of those will work.
  • If you let the granola cool without touching it, you’ll get more chunks, almost like oatmeal cookies!
  • Serve as is or with fresh yogurt and berries.
  • Almond butter granola makes a wonderful topping for ice cream!
  • Use old fashioned whole oats, not the quick oats.
  • This recipe is gluten free!
  • I typically use shredded coconut but you could just as easily use coconut flakes.

It hit me out of the blue like a bad toothache. Crippling anxiety descended 3 years ago and refused to let up. I didn't know what to do. I could barely eat, let alone write, speak, or create. Never in my life had I experienced anything like it and it terrified me.⁠⠀

I begged the Lord to take it away but He simply said, "rest." He led me to Psalm 23 and the words nearly jumped off the page: "He makes me lie down in green pastures. He leads me beside still waters. He restores my soul" (Psalm 23:2, ESV)⁠.⁠⠀

And that's when I saw it. ⁠⠀
⁠⠀
He MAKES ME LIE DOWN! I knew in that moment it wasn't my choice. I wasn't about to argue, but I wanted to know why. Why anxiety? Why ME? That's so not who I am! But, it drove me on a desperate search for answers as to why on earth God sometimes MAKES us lie down? ⁠⠀
⁠⠀
Psalm 23 seems so peaceful—still waters and all that—and much of it is, but I'm learning God is in complete control of our circumstances and He knows exactly what we need every moment. Sometimes He makes us lie down to get our focus, to protect us, to help us, to realize we're blessed right where we are. ⁠⠀
