It’s so simple to make. There’s no cooking required. Simply chop up all your ingredients, put them in a pretty bowl, and bring Watermelon Salsa to your next barbecue or potluck. Makes a great side dish, or scoop it up with corn chips.
Watermelon Salsa
Ingredients
- 6 cups watermelon - seeded and cubed
- 2 papayas - cubed
- ½ red onion - cubed
- 1 cucumber - peeled seeded and cubed
- 2 jalapeños - ribs and seeds removed and cubed
- ¼ cup fresh basil - chopped
- 2 cloves garlic - minced
- Zest from one lime
- Juice from 2 limes
- ½ to 1 teaspoon salt
- Freshly ground pepper
- 1-2 tablespoons sugar
- ¼ cup Italian parsley
Instructions
- Mix all ingredients together and serve with tortilla chips!
Feel free to change up the fruit. Mangoes and peaches would be amazing, and add any kind of berries you like. To control the heat, leave the jalapenos out. And feel free to replace the red onion with a Vidalia onion for a little added sweetness.
